On a blazing hot morning in July we drove up to Ljungskile, a small seaside community an hour from Gothenburg on the west coast of Sweden, to visit the mussel specialist Janne Bark. Last summer, Janne opened a restaurant called Musselbaren in an old disused clock tower next to the harbour. The fishing industry along this stretch of coastline has been in decline for years and the restaurant is his attempt to breathe some life back into the area.
