Joining Bird Rock Coffee Roasters, Richard Walker’s Pancake House, the incoming Mendocino Farms, and a variety of new eateries coming to The Square at Bressi Ranch is Casero Taqueria, a new concept from co-founders Clayton Wheeler and Craig Applegate, who also own several local franchise locations of specialty sandwich shop Board & Brew.

Coming in at 5,059-square-feet, the Carlsbad restaurant will have an indoor/outdoor bar serving spirits, wine, and beer and a fast-casual menu developed by veteran local chef Alex Carballo. Tacos will be based on hand-pressed tortillas and filled with citrus-marinated carne asada, chicken, and local line-caught fish cooked over a wood-fired grill. There will also be tortas, shareable seafood-based starters, slow-cooked carnitas and birria, and classic Mexican desserts. Opening this June, the 155-seat eatery will also include a market area featuring ready-to-cook, take-home items from the Casero menu including marinated meats, salsa, and tortillas.
